Another tasty but completely different way to prepare polenta:

The main ingredient separating this polenta dish is Tarragon--uniquely nicknamed Dragon-Wort.

1 cup fresh spinach

1 diced tomato

1 cup prepared polenta

1 tbsp. grapeseed oil

Hefty dash of Tarragon

nutritional yeast

Pepper to taste

Saute all ingredients in a pan until polenta is golden and spinach has shrunk.

***Tarragon is most used in French cooking, but don’t make this recipe unless you have tried the spice first. Tarragon is an acquired taste, and tends to compliment tomato-y foods.
