Sometimes, you just need a small easy meal, like when you are cooking dinner in a hurry to catch the final season premiere of Lost. That’s uh, what I had to do tonight. So what ingredients do I always have on hand that require little effort? Canned black beans, because Mexican food is forever. Frozen corn. Canned crushed tomatoes. Bread. You have these ingredients, too. And now you can make Mexican Pizza, like the kind you would serve if you were into sports and had a sporting event party that entailed snack foods and beer drinking while yelling obsenities at a tv screen. This wouldn’t exaclty [ever] happen in my life, but I get this similar experience by yelling about how absurd Lost is to myself. How can such a epic series even have a final season? Everyone be thinking of what to make for the final final episode in 2 months. A cake with a black cloud of smoke on top?
The Snacker’s Mexican Pizza Recipe:
1/2 cup frozen corn
1/2 cup black beans
green onion or red onion slices to taste
Tbsp ranch dressing
<mix these together>
Shredded vegan mozarella
Tomato sauce (see recipe below if you want to make your own)
Leftover Italian bread or an actual pizza dough (but remember, this is supposed to be a LAZY recipe)
<Assemble pieces of bread into pizza by topping generously with tomato saice, the veggies, and cheese. Garnish with cilantro or jalepenos and bake for 15-20 minutes at 400 degrees.>
Tomato Sauce Recipe:
Saute some minced garlic and onions in medium stock pot.
1 28 ounce can crushed tomatoes
big dash of oregano, parsley, and basil, and lemon juice.
<Bring to boil and then simmer for about 20 minutes.>
This recipe can easily be doubled, and you can recycle the leftover sauce for a new pizza creation, lasagna, rice, even as a soup thickener. If none of these sounds worthwhile, you can freeze the rest and keep it on hand for the next time you want to ship up a quick pizza snack.
Now, go watch some mindless television and enjoy a night of pizza with some like-minded friends.
