I’ve been wanting a sandwich solely for the purpose of using some exciting new spinach tortillas I have. I was also inspired by tortillas when I was scrolling through allrecipes.com and saw sliced rolled tortillas as pretty finger food. In light of the recent Superbowl and my lack of fun party foods (I went to dinner with Paige, who doesn’t care about the superbowl either), I want to have a collection of finger foods to go along with a substitute event involving several hours and a tv. Like a Lord of the Rings marathon? Hint, hint, friends.

Your final product should look something like this, except greener.

Raw Avocado Mayo

1 avocado

1 tbsp lime juice

1/2 cup pine nuts

1 clove garlic, minced

2 tbsp apple cider vinegar

4 or 5 Medjool dates (pitted)

1 tsp sea salt

pinch cayenne

Use food processor to blend until smooth.

If your tortillas are green like mine, this condiment will match perfectly, so you’ll have to fill the tortilla with something colorful. Well you don’t have to, but everyone wants to eat a pretty sandwich. If you’ve never made a tortilla roll up you spread a thin layer of chosen ingredients in tortilla, roll it up tightly and then slices it into several pieces, keeping them held together with toothpicks. If you don’t have dates, I think you could use nearly anything as a substitute. If you want to sweeten your blend, try adding a bit of agave (because dates are sweet). Just think of what you will pair your avocado mayo with, and blend. This recipe makes a lot however, so if you are making it for one sandwich I would advise halving the recipe, as I doubt the sauce will stay fresh unless you freeze it. Happy green colored cooking.
