With lots of leftover buffalo dip, you don’t want to limit yourself to only using it as a dip (that will get old fast). Instead, turn it into an easy-to-make next day meal. Buffalo nachos! Every mouthful is a unique and wonderful experience. One chip has half salsa and rice, the next has an overload of buffalo dip and black beans. You’ll want to remake this 4 days in a row. I ate it while watching American Splendor, which I also recommend.
This is especially easy to make if you are low on groceries–I just used canned black beans, 90 second microwave Santa Fe rice, and sauteed half a green and red pepper. Put one layer of tortilla chips on a plate and top with a few spoonfuls of said leftover buffalo dip, peppers, rice, and black beans. Add another layer of chips and toppings and microwave for about 2 minutes. Garnish with extra cheese, sour cream, salsa, jalapenos, and cilantro if desired.
